Grown under special conditions, the tea field is kept under 90% shade by using a black screen for 30 days at the end of April, giving the tea leaves a higher chlorophyll content and a lower tannin content. The picked leaves are immediately sent to the farmer’s plant where they are washed with steam to spread chlorophyll and stop fermentation. After drying, the tea is kept under refrigeration, adding taste and flavor. At this time, the tea leaves are separated from the leaf veins, stems and twigs. The refined tea leaves then become Matcha, ground by a stone mill in the climate-controlled clean room. Finally the completed Matcha goes through a strict examination for color, aroma and taste.

Although the Japanese Tea Ceremony is an elaborate process with special bowls and mixing brushes, the easiest way to prepare Matcha is to place half a teaspoon Matcha into a teacup, pour hot water (180ºF) into the cup and mix for 20 seconds.
